The Lambic Project

On April 17th, we embarked on our Lambic project which marks a Canadian first.

Located next to beautiful Calabogie lake in the rolling hills of the Ottawa Valley, we purpose built a 10bbl open air holding tank outside the brewery. Instead of using our cultivated strains of brewer’s yeast, we ran-off our 10bbl brew into the open air holding tank and exposed it to the wild yeasts and bacteria native to the Ottawa Valley. The beer was fermented spontaneously through this exposure with the goal of creating a beer that truly expresses the nature of the region.

The Lambic-style beer has been transferred to special Chardonnay and Port barrels for the next year. Look for an exciting update in April 2018 and join us on this wonderful expression of the Art of Brewing!
